Start your day with a breakfast bowl that is equally filling and tasty!
1/2 cup cooked Quinoa (or Millet)
2 Pasture Raised Eggs
1/2 diced large Tomato
Hot Sauce (we often use Sriracha)
Optional: handful of cooked Spinach
If your quinoa is not yet cooked, follow directions on packaging to cook desired amount
In a pan, add olive oil or butter & scramble eggs, making sure to season appropriately with salt & pepper
Add quinoa as the base of the bowl
Top the quinoa with eggs with diced tomato and avocado
You can also prepare cooked spinach, if desired
Add hot sauce to liking
We like to make the quinoa in bulk to use throughout the week
Add a little Everything But The Bagel Seasoning to spice it up!
We often use Sriracha as our hot sauce of choice
