Shrimp Veggie Stir Fry (Low FODMAP)

For our people who are eating Low FODMAP foods due to GI issues, this one's for you! (and whoever wants a tasty low carb meal!)


Ingredients

Serves 3-4

  • Zucchini Noodles (2 cups)

  • Butternut Squash noodles (2-3 cups)

    • (You can sub spaghetti squash, cook it in the oven until done & add it to the pan after zucchini noodles are cooked!)

  • Wild Caught Shrimp (1 lb)

  • 1 bag of Miracle Noodles (Shirataki noodles) which contain viscous fiber that functions as a prebiotic.

  • 1 Red Bell pepper

  • Fody Sesame Ginger Marinade (to taste, we used about 5-6 tbsp)

  • Salt & Pepper to taste

Directions

  1. Heat a stir fry pan with 2 tbsp extra virgin olive oil

  2. Add veggies and diced peppers

  3. Add Fody Sesame Ginger marinade to the pan

  4. Cover pan and let cook for 3-5 mins (*NOTE* if you want the zucchini noodles to be less done, add them in 2 mins after butternut squash noodles)

  5. While the veggies are cooking, add olive oil or butter to a separate pan and cook shrimp until done

  6. Drain and rinse miracle noodles

  7. Once veggies & shrimp are cooked, add miracle noodles and shrimp to the stir fry pan

  8. Mix everything together & serve!
