Pesto and pasta are two words we always want to hear together. Of course, it's gluten and dairy free!
Gluten free noodles of choice (pictured are Lotus Foods)
Pesto (recipe located under "Snacks" tab)
1/2 sliced Red Bell Pepper
1/4 diced Onion
1-2 c Broccoli
Salt & Pepper
Heat water in a pan to cook noodles (cook noodles according to package)
In a separate stir fry pan, cook bell pepper & broccoli in olive oil on medium heat until tender (you may need to cover the pan with a lid to cook the broccoli through)
Once noodles are cooked, strain and add them to the veggie pan
Add 3-4 tbsp of pesto and use spatula to mix everything together
Top with salt and pepper!
